One needs to start by using water with no chlorine and dissolve three and a half tablespoons of organic raw sugar in a quart jar with a cup of boiling water. Add two and a half more cups of cool water to the quart jar and add 3-4 tablespoons of kefir grains. The water needs minerals to feed the grains, and one can add a slice of organic lemon, a pinch of baking powder, and, sometimes, a few slivers of ginger and a boiled eggshell to boost the minerals in the water. Ferment for 48 hours and then bottle the kefir in an airtight container with fruit to add fizz and flavor for 24 more hours. While the kefir grains thrive in a sugar source, the caster sugar can be substituted for other sugars like coconut sugar, maple syrup, and light molasses.
